Italian Style Enchiladas


Yes it is Summer, it looks beautiful outside, all the patios are decorated for picnics and I should be grilling and sipping wine on the deck! However, being in Chicago with a very muggy heat wave, (actually I suppose this is normal Summer weather, ugh) and averaging 2 mosquito bites a day, I am choosing to use the oven at a blistering 450 degrees. Much more tolerable than feeding myself to those pesky mosquitoes! I have not gone out without that new "Off" repellent fan that I purchased after being here two days and 7 bites in. Yes, it does work, in case you were wondering.

So here it is, the 450 degree oven recipe made with packaged and canned Trader Joe's shopper ingredients! I came across this recipe in a dusty old cookbook on Judi's shelf and adapted it using what she had on hand. It really was good! I created some red beans and rice (see recipe below) to go along with it.



Italian Style Enchiladas
Adapted from Better Homes and Gardens Minutes to Mealtime Chicken and Turkey Recipes


2 chicken breasts
1 16 oz. can stewed tomatoes, strained
2 organic green onions, chopped
1 small jar 16 oz. Prego spaghetti sauce
1 1/2 cups shredded cheddar cheese
6 flour tortillas
olive oil for pan
salt and pepper to taste
sour cream

Heat oven to 450 degrees.
Chop chicken into 1/2 inch cubes and add to frying pan with 2 tablespoons olive oil.
Cook chicken until cooked throughout, season with salt and pepper. Add stewed tomatoes and cook until heated. Add 1/2 of the green onions and 1/2 cup of the cheese and mix together. Pour 1/4 cup of the Prego into a 9x9 baking dish. Assemble enchiladas by placing a few spoons full of the chicken mixture into flour tortillas. Fold the tortillas over so that the seams are toward another tortilla. Pour the remaining Prego over the filled tortillas and sprinkle with remaining cheese and onions.
Bake for 12-15 minutes. Top with sour cream.

Red Beans and Trader Joe's Organic Jasmine Rice

1 package Trader Joe's Organic Jasmine Rice
1/2 Serrano pepper, minced
1 12 oz. can tomato sauce
1 16 oz can kidney beans, strained and rinsed
handful organic cilantro, chopped

In a medium saucepan heat kidney beans and tomato sauce.
Cook Trader Joe's rice in the microwave for 3 minutes per package instructions. add rice to bean mixture. Add Serrano pepper and cilantro.

Serves 6
